Hi, I’m Elizabeth! In 2012, my family made drastic dietary changes (cutting grains, refined sugar and processed foods) in order to address some persistent health problems. It was a struggle at first, but I was determined that I could find a way to make this new lifestyle delicious….maybe even fun. As my family’s health began to improve, I was encouraged and I began to get more creative in the kitchen. Experimenting with new ingredients and recipes, I learned to make muffins, cupcakes, cookies, and crackers that were delicious, and more nutrient-dense than any of their grain-filled counterparts. The most surprising part was how much I truly loved what I was doing. I never would have dreamed that I would be opening a bakery or helping others eat healthier. This journey started out as a necessary chore, but turned into a passion. I first viewed it as a struggle, but now I just….consider it joy.
Elizabeth is the creator, co-owner and baker at Consider it Joy. When she isn't up to her elbows in almond flour, you can find her under an electric blanket and a pile of cats, watching Breaking Bad. Elizabeth is married to her best friend, a rocket scientist named Jason and has 2 delightfully quirky kids. She smells like granola.
Rebecca is our talented chef and co-owner. She changed the way her family ate after a serious health scare. She wanted to treat health issues within her family with food. By eliminating processed foods and grains she brought her family back to health. She has been eating Paleo since before Paleo was cool, going on 6 years now. She is also a certified yoga instructor who brings much-needed Zen to our kitchen.
Tangie joined our team in March, and quickly became an irreplaceable fixture at the bakery. You will often see her smiling face up front at the register, but you can be assured that no matter what she's doing, she is doing it with a smile and a generous attitude. On the rare occasion she isn't working with us, Tangie loves exercising, drinking coffee and spending time with her family.
At Consider it Joy, We prepare delicious, grain-free treats and meals. We bake with almond and coconut flours and sweeten our items naturally--primarily using honey or pure maple syrup.
